Meet native Texan Jason Moore, owner and winemaker for Modus Operandi Cellars. Jason’s path to winemaking started in Dallas in 2002 where by day he was a real estate agent and by night a waiter working with many of the city’s finest restaurants. After six unfulfilling months, Jason and his wife had a three-week long garage sale, sold everything they owned and moved to California where he had the ambitious aspirations of becoming a winemaker.
Over the next 4 years Jason was a server at La Toque in Rutherford while learning the finer points of making wine out of a garage with grapes donated by a Napa vineyard owner. In 2004 Modus Operandi Cellars was born with his first vintage. Jason also serves as a consulting winemaker for Poem Cellars, Cielo Malibu Estates and Coleman Nicole Wines.
On this evening we will be pairing four of Jason’s wines and, as always, have the opportunity to buy bottles at a special discount.
First Course
Endive, house-smoked trout, potato and lemon vinaigrette

House made venison terrine with Cumberland sauce

Leg of lamb shish kabob with spiced risotto

Filet of beef with gnocchi à la Parisienne
Paired with Modus Operandi Cabernet Sauvignon

Chocolate terrine, crème Anglaise and toasted nuts
Paired with Kobalt Cabernet Sauvignon Dessert Wine
